Watermelon badam barfi

Watermelon badam barfi (For 16 servings) - Great for Divali !

250g of almond paste (AKA Marzipan - Refer to photo in step 1)

5g cardamom powder

1 teaspoon of black sesame seed (Refer to photo in step 9)

Red food coloring (preferably in gel)

Green food coloring


Procedure

Step 1 : Break your almond paste into small pieces and add your cardamom powder.

Step 2: Knead (press, rotate 90 degrees, press, rotate 90 degrees.... ) until fully combined.

Step 3 : Take 180g of almond paste (out of the total of 250g), add to it your red food coloring and knead until you obtain a uniform red color paste as shown below (right).

Step 4: Divide your red colored almond paste into four portions as per the measurements below !. Shape each portion into a watermelon shape ! Cover with cling film and place them in the refrigerator to harden for 15 minutes.

Step 5: Divide the remaining non-colored almond paste into 4 portions (~19g each) and flatten them using your rolling pin (thickness ~ 1.5 mm).

Step 6: Slightly moisten one flattened paste with a damp brush before wrapping a watermelon-shaped almond paste (after the 15 minutes visit in the refrigerator ) !

Step 7: Repeat with the other watermelon-shaped almond paste ! Place in the refrigerator (covered with cling film) for another 15 minutes to harden slightly.

Note: Yes, they do look like Dinosaur eggs !

Step 8: After 15 minutes, remove them from the refrigerator, mark the top part to obtain 4 slices and cut accordingly !


Step 9: Slightly press some black sesame seeds on the red area.

Step 10: Position all watermelon slices on a piece of parchment paper as shown below (left). Add some green food coloring to a small amount of water and gently brush the white area with a slightly damp brush (use absorbing kitchen towel to remove excess color from brush) as shown below (right).

Note: Your brush should not be too wet to prevent color 'leaking' or eventual long drying time.

Step 11: Add one additional drop of green food coloring to your existing green mixture (to deepen the green color) and create small strokes (random) as shown below.

Step 12: Add another drop of green food coloring to your existing mixture to further deepen the green color and this time create regular strokes as shown below .

Step 13: Allow your watermelon slices to dry in a non-humid environment for at least 12 hours. I normally keep them in my oven (off ) to dry overnight.

Step 14: Once your watermelon slices are dry, serve accordingly !
