Tortilla Pinwheels

Tortilla Pinwheels (For about 8 filled tortillas/ 5 dozens pinwheels - Vegetarian Recipe)

To be prepared on the eve ...

For the tortillas

375g of multi purpose flour

70ml olive or sunflower oil

4g baking powder

5g salt

180ml of warm water

For the filling

400g of cream cheese (I used 2 boxes of Philadelphia)

Salt and pepper to season

1 large red pepper

1 large yellow pepper

1 medium size onion

20 green olives

20 black olives

2 pots of Greek yogurt (refer photo step 6)

1 bunch of spring onion

50g of grated cheddar cheese


Step 1 (Making the tortillas ): In your mixing bowl add your flour, salt and baking powder and mix well together. Once mixed add oil and warm water.

Step 2: Knead until you obtain a non-sticky dough as below (right).

Step 3: Separate your dough equally into 8 portions and using your rolling pin, flatten each portion to a thickness of about 2mm. Try to flatten your dough into a square shape as far as possible .

Step 4: Place your flattened dough on your hot tawa (or pancake pan ) and wait for small bubbles to start forming (10-15 seconds) as shown below (left). Once they do form, just turn your tortilla for it to cook on the other side and voila, sexy homemade tortilla is ready !

Step 5: Repeat step 4 with all the remaining portions of dough and once all the tortillas are cooked, just wrap them all in aluminium foil. Allow to cool.

Step 6: Meanwhile prepare your filling ! Cut your spring onions, olives, peppers and onion into small slices or cubes as shown below.

Step 7: Mix them all together with your cream cheese and Greek yogurt .

Step 8: Add your grated cheese then season with salt and pepper to taste. Perform a final mix and voila, your filling is ready !

Step 9: Spread a generous amount of your filling on a now cool tortilla as shown below.

Step 10: Then roll your tortilla while pressing gently ...

Step 11: Repeat step 9 and 10 with the remaining tortillas and once completed, place them all on a baking tray and cover with cling film. Refrigerate overnight .

Note: Ensure that you prepare your filled tortillas on the eve that you are going to serve them

Step 12: The next day, 30 minutes before you need to serve them, just get them out of the refrigerator and cut each filled tortillas in slices of about 2cm at shown below.

Note: Keep the cut extremities for your snack time ...
