Stuffed melon squash / Patisson farci (For 2 persons/ Vegetarian recipe !)
1 large Melon squash / Patisson
Salt and Pepper to season
5 cloves of garlic
3-4 branches of parsley
2 black olives
20g of grated cheese
2 tablespoons of tomato sauce
2 Teokon pieces (Refer photo step 7)
1 medium size tomato
2 tablespoons of Olive oil
3 tablespoons of sugar
Procedure
Step 1: Fill your pan with water (~50%) and add in 2 tablespoons of sugar, salt (up to taste) and 3 grated cloves of garlic. The idea is to season the water accordingly so that it will in turn season the Melon squash accordinly when the latter will be cooking/boiling.
Step 2: While waiting for your seasoned water to boil, wash and cut your Melon squash in half
Step 3 : Remove the peduncle on the halves respectively
Step 4: As soon as your seasoned water starts to boil, add in your Melon squash halves and allow them to cook covered for about 20-30 minutes on low-medium heat.
Step 5: As soon as your Melon squash is cooked (brochette pick easily penetrates when inserted in the center of each half) after about 20-30 minutes, remove them from the water and place them on a baking tray covered with Aluminum foil.
Step 6: Remove the seeds of your Melon squash using a spoon preferably. You may as well remove some of the flesh to leave more room for your filling ..
Step 7: Now that your Melon squash is ready, let us prepare the filling ! Cut your 2 Teokon pieces into small cubes like in the picture below.
Step 8: In a pan, add your Teokon cubes, 2 tablespoons of Olive oil, 1 tablespoon of sugar, 2 pinches of salt and 2 pinches of pepper. Allow to cook on a low-medium heat and once your Teokon cubes starts to caramelize / become golden brown, add in your tomato cut into thin slices.
Step 9: Once your tomato slices have fully softened, add 2 tabespoons of tomato sauce (this will increase the red color intensity of your filling) as well as 2 cloves of garlic thinly chopped...
Step 10: Stir for about 1 minute on medium-high heat. Your filling is ready ! Get ready for stuffing !
Step 11: Stuff your Melon squash halves with your filling and top them with some thinly sliced Parsley
Step 12: Add as well about 10g of grated cheese on top of each half, season with some pepper and complete with a black Olive
Step 13: Put your stuffed Melon squash in your oven on the top shelf at 180 Degrees Celsius for 6 minutes on the Grill mode ..
Out of oven - Hot Hot Hot !...
