
Stuffed gateau arouille (For 3-4 persons)
~200g of Arouille (Taro)
Salt and Pepper to season
~5g of grated ginger
2 cloves of garlic (grated)
1 tablespoon of sugar
5 tablespoons of Olive oil
1 tablespoon of water (~10ml)
1 small green pepper
1 small red pepper
200g of maize grains
6 black olives
3 portions of "Vache qui rit - Light" (refer photo step 8)
12 cavities bun pan (refer photo step 5)
Procedure
Step 1: Peel and wash your Arouille !

Step 2: Grate your Arouille in the largest section of your grater.

Step 3: Once your Arouille is fully grated, add your tablespoon of sugar, 2 pinches of salt, 2 pinches of pepper, 1 clove of grated garlic, your grated ginger, 3 tablespoons of Olive oil and 1 tablespoon of water.

Step 4: Mix mix mix until you obtain a thick arouille paste !

Step 5: Get your bun pan and using your fingers or your favourite silicon brush, place a thin layer of your Arouille paste in each and every cavity. Once all cavities are filled, your arouille cups are ready for oven!
Tip: The layer of arouille paste should really be as thin as possible if you want a very crispy arouille cup. If however you prefer a softer and moist texture, you may then put a thicker layer of arouille paste ..

Step 6: Bake your arouille in a preheated oven at 200 degrees Celsius for about 10 minutes or until it starts to brownish.

Step 7: Out of oven. Hot Hot Hot ! Allow your gateau arouille cups to further harden while cooling on your wire rack !

Step 8: Time for stuffing your gateau arouille cups ! In your pan, add your maize grains, 2 tablespoons of Olive oil, 1 clove of grated garlic, 2 pinches of salt and 2 pinches of pepper. After cooking on medium to high heat for about 4 minutes while stirring from time to time, add your "Vache qui rit light" triangles and stir until they have melted completely.

Step 9: Once your cheese has fully melted, stop the heat and your main stuffing is ready to go ! Fill your gateau arouille cups with your maize stuffing accordingly as in the image below.

Step 10: Cut your green and red pepper into small cubes. Then top your maize stuffed gateau arouille with your pepper cubes

Step 11: Finally top with half of a black olive (do not leave the seed) and voila!
