Special Peanut Barfi

Special Peanut Barfi - Great for Divali festival (For about 16 lucky ones )

Ingredients

1 can of sweetened condensed milk

250g of milk powder (I used 'Farmland' brand)

40g of clarified butter (ghee)

80ml of whole or semi skimmed milk

5g of cardamom powder (Elaiti)

3-4 drops of green food colouring

1 can (185g) of roasted salted peanut (I used 'Happy' brand)

100g of compound chocolate (refer photo step 8)

20cm loaf pan (purchased at Intermart Ebene - 'Domedia' brand)

Note: "Secret" ingredient........... LOVE !


Procedure

Step 1 : In your pan (on lowest heat), add your condensed milk, clarified butter (ghee) and milk powder. Mix well using a wooden or silicon spatula and once combined, add your milk .

Step 2: Mix mix mix until your mixture starts to detatch from the pan (and becomes slightly paler) as indicated below .

Step 3: Once your mixture has started to detatch from the pan, add your food colouring and continue mixing vigorously until you obtain a uniform color .

Step 4: Add your salted peanuts (reserve a small amount for decoration ) and mix until well combined .

Step 5: Turn off your heat. Add your cardamom powder and do a final vigorous mix . Your barfi dough is ready !

Step 6: Line your loaf pan with parchment paper and transfer your barfi dough to the pan while ensuring to press firmly using your spatula. Place in the refrigerator to cool for 15-20 minutes .

Step 7: After 15-20 minutes in the refrigerator, take your barfi out and cut your 'loaf' into slices of 1 cm thickness

Step 8: Melt your compound chocolate in your microwave (interval of 30 seconds until fully melted ).

Step 9: Immerse about one third (1/3) of each barfi slice in the melted chocolate !

Step 10: Decorate with some peanuts and allow the chocolate to harden at room temperature. Repeat with the remaining barfi slices ...

Step 11: Voila !.... Super easy and made with love !



You may serve your peanut barfi on your favourite serving plate equipped with battery operated lights for that 'Wow' effect ... I got these adorable plates in different sizes at Manjoo Bagatelle. I got the battery operated lights at 0.78 usd on Ebay

Use sticky tape to position your lights around your serving plate (hide the part of the wire which does not contain the leds together with the switchtogether with the switch at the base of your serving plate )
