Special Easter Cookies

Easter Cookies (For about 15-20 cookies !)

For the cookies

320g pastry flour

2g salt

40g of unsweetened pudding mix (any flavor of your choice - refer photo step 1)

165g salted butter

50g chocolate chips

60g icing sugar

15ml Almond essence (Robson Brand)

10ml Vanilla essence (Robson Brand)

For the decoration

250g of Marzipan (Almond paste) or Fondant (sugar paste) in the color/s of your choice

1 egg shape cookie cutter

1 fondant embossed mat (Refer photo step 8)

Flower plungers

A brush and a small bowl of water

~25g of Corn flour or icing sugar for dusting

Note: For the Fondant/ Sugar paste, you can:

1. Prepare your own very easily at home using the recipe here.

2. Purchase it ready-made


Procedure

Step 1 : In your mixing bowl add your flour, icing sugar, salt, pudding mix and mix well together.

Step 2: When your dry ingredients are uniformly mixed, add butter.

Step 3: Once the butter is fully combined (uniform color), add your chocolate chips, Almond and Vanilla essence.

Step 4: Knead well until you obtain a non sticky and firm dough.

Step 5: Using your rolling pin, flatten your dough obtained from step 4 to a thickness of about 7mm. Then using your egg shape cookie cutter, cut out some shapes and place them on a non-stick baking tray .

Step 6: Cookies are ready to be baked in a pre-heated oven at 175 Degrees Celsius for 18 minutes or until golden brown !

Step 7: Cookies out of oven - Hot hot hot ! Allow to cool on a cooling rack.

Step 8: Time for decoration ! Get your Fondant and/or Marzipan, the same egg shape cookie cutter (washed) you used in step 5, a brush and a small bowl of water for sticking the Fondant and/or Marzipan on the cookie surface. Using your rolling pin, flatten your Fondant and/or Marzipan to a thickness of about 2mm while just below your embossed fondant mat, cut your fondant using your cookie cutter. Brush a cookie with a little amount of water and position your cut fondant on one cookie.

Tip: Dust your working space with some corn flour or icing sugar to prevent your Marzipan or Fondant to stick ..

Step 9: Use your favourite flower plungers and/or fondant ribbon cutters to create some cute decorations of your preferences.

Voila !
