Special Catriona`s Couscous !!!

Ingredients

250g medium couscous (refer photo in step 1)

375ml seasoned water (That is 375ml water + 1.5 teaspoon salt + 1 teaspoon sugar)

250g of vegetables (refer photo in step 9)

1 clove of fresh garlic

2 teaspoons of Olive oil

1 teaspoon of sugar

Salt & Pepper for seasoning

25g Corinthian raisins

250g of the meat of your choice (replace by extra 250g of vegetables for vegetarians)

Garlic chilli sauce (Can be used for vegetarian version as well)


Procedure


Step 1: Weight your Couscous as well as your seasoned water (refer ingredients list) accordingly

Step 2: In your pan, add your seasoned water and your thinly chopped garlic clove and allow to boil on a medium-high heat.

Step 3: Once boiling starts, turn off the heat and add your couscous

Step 4: Allow your couscous grains to absorb all the seasoned water. This may take 3-4 minutes.

Step 5: Once all the seasoned water has been absorbed by the couscous grains, get a sufficiently large piece of unused aluminum foil and follow step 6.

Step 6: Spread your couscous evenly on your aluminium foil. This will stop it from cooking further (increase surface area for maximum loss of heat in the minimum amount of time) as well as help your couscous to be 'grainy' instead of big sticky lumps ..

Step 7: While your couscous is cooling, stir fry your meat (as per your choice) with a full spoon of garlic chilli sauce, 1 teaspoon of olive oil as well as with a pinch of salt and pepper. If you are doing the vegetarian version, replace the meat with 250g of vegetables (do not forget to add further 250g of vegetables in step 9) .

Step 8: After 4-5 minutes of continuous stirring on high heat, allow your meat to cool next to your couscous grains. For vegetarian version, skip this step ...

tep 9: Stir fry your vegetables with a teaspoon of olive oil, a full pinch of salt, a pinch of pepper and a teaspoon of sugar.

Step 10: After about 5 minutes of continuous stirring over high heat, turn off the heat.

Step 11: Place your couscous grains, meat (or chilli seasoned vegetables) and stir-fry vegetables together in one pan and mix them all uniformly !

Step 12: Add your final ingredients; your Corinthian raisins and mix well !
