Sauteed tagliatelle with grilled vegetables !



Sauteed tagliatelle with grilled vegetables (For 3 persons or 2 very hungry persons !)

1 sachet of Tagliatelle - 300g (Preferably fresh - I purchased mine at Intermart at ~Rs100 (Refer photo step 7)

2 large onions

2 small/medium size eggplants (bringelle)

1 medium size zucchini (courgette)

1 tablespoon of Pesto (Refer photo step 6)

Salt and pepper to season

3 tablespoons of olive oil

3L of water (for cooking Tagliatelle)

30g of coarse salt (for cooking Tagliatelle)


Procedure

Step 1 : Cut your eggplants into thin slices and allow to soak in salted water for about 15-20 minutes.

Step 2: Then place your eggplant slices on a grill pan, season with 2 pinches of salt and pepper as well as a tablespoon of olive oil and allow to cook on a low-medium heat until golden brown and soft.

Step 3 : Do not forget to turn the slices from time to time to ensure that they are uniformly grilled on both sides .

Step 4: Repeat steps 1-3 with your zucchini !

Step 5: After the zucchini slices have been grilled, cut your onions in large pieces, grill them as well (do not forget to season with salt/ pepper and to add one tablespoon of olive oil). It is important to cook your vegetables separately because they have different cooking times .

Step 6: Once all your vegetables have been perfectly grilled, transfer them all back to your grill pan, add one full tablespoon of pesto and stir fry for 2-3 minutes on a low-medium heat until well combined . Then reserve for use in step 9 !

Step 7: Put 3L of water in a pan, add 30g of coarse salt (gros sel) and wait for the water to boil*. Only when the water is boiling, transfer your 300g fresh Tagliatelle in your pan. Start your timer as from this moment set to 3 minutes (as applied to fresh pasta).

*Important Tip: Ratio of Salt: Pasta:Water is 10:100:1000, that is 10 grams of salt for cooking 100 grams of pasta in 1000 milliliters of water (where 1000 ml = 1 liter). Note that here the salt to be used is NOT table salt (fine salt) but coarse salt (gros sel)!

Step 8: Stir your pasta from time to time and transfer it to your colander as soon as cooking time is over to remove the excess water !

Step 9: Then add your Tagliatelle to your grilled vegetables set aside in step 6 and give them a good stir .
