Quinoa salad with grilled chicken

Quinoa Salad With Grilled Chicken (For 3 servings)

Ingredients

  • 3 medium size chicken breasts (about 350g)

  • 150g of Quinoa (refer to picture: step 1/2)

  • 2 cloves of grated garlic in 1.25L of salted water (for cooking the quinoa)

  • 5 tablespoons of olive oil

  • 240g of lettuce and/ or rocket (I am using both)

  • Seasoning salt - for grilled meat (refer to picture: step 7)

  • 200g of Cherry tomatoes (refer to picture: step 10)

  • 45-50g of cheese cubes (refer to picture: step 10/11, sold at Intermart ~ Rs138)

  • 1 tablespoon of Balsamic glaze (refer to picture: step 14, sold at Jumbo ~ Rs190)

  • 6 tablespoons of your favourite mayonnaise (refer to picture: step 14)

  • 12 black olives

  • Tons of love


Procedure

Step 1 : Get your Quinoa ready :)!

Step 2 : Check the instructions for cooking the Quinoa, I personally like to add 2 cloves of garlic (grated) to my salted water when boiling for more flavour.


Note: The instructions mentioned to cook 120g of Quinoa in 1L of water, since I was cooking 150g of Quinoa, I used 1.25L ;).

Step 3 : As soon as your water starts to boil, add your Quinoa

Step 4 : Stir from time to time until your Quinoa is fully cooked (takes about 12-14 minutes)

Step 5 : Drain your cooked Quinoa and spread it on a large sheet of Aluminium foil (clean/ never-used). Allow to cool completely.

Step 6 : Get your chicken breasts and make large/deep cuts as shown below (don`t cut them into slices :O!).

Step 7 : Mix your chicken breasts with some olive oil and get your favourite seasoning salt!

Step 8 : Slightly coat your chicken breasts with your seasoning salt

Step 9 : Allow your chicken breasts to cook in the oven at 200 degrees Celsius, on grill mode, for 15-20 minutes

Step 10 : Time for dressing! Get your Cherry Tomatoes and Cheese cubes (you can use Feta cheese if you prefer)

Step 11 : I really like the Apetina cheese cubes not only because it is tasty (similar to Feta) and good looking (beautiful cubes), but also because of the packaging which makes its use and storage super easy!

Step 12 : Add some olive oil to your rocket/ lettuce mixture

Step 13 : Then add your Quinoa (from step 5) and Cherry tomatoes (you may or may not cut them in halves).

Step 14 : Add your black olives and cheese cubes then get your balsamic glaze and mayonnaise ready :D!

Step 15 : Add your mayonnaise and balsamic glaze, then lastly, top with your grilled chicken breasts and voila, your healthy and yummy salad is ready :D!
