Healthy Cheesy Potatoes !

Healthy Cheesy Potatoes (For 2-3 persons - Vegetarian recipe)


1kg of potatoes

Salt and pepper to season

250ml of semi-skimmed milk

1 full teaspoon of corn flour (dissolved in 2-3 tablespoons of water)

3 triangles of 'Vache qui rit' cheese in 'Light' version (Refer photo step 6)

40g of your favourite cheese (I am using sandwich cheddar by 'Vache qui rit', refer photo step 6)

40g of red pepper cut into small cubes

40g of yellow pepper cut into small cubes

Chopped spring onions (just for the topping)

Chopped onions (just for the topping)

Orange food colouring (optional)

Step 1 : Peel and wash your potatoes .

Step 2: Cut your potatoes in wedges as shown below. Then boil in a salt seasoned (to taste) water !

Step 3 : Once a wooden skewer can be easily inserted in a potato wedge as shown below (after about 30 minutes boiling), your potatoes are cooked !

Step 4: Place your potato wedges on a baking tray lined with parchment paper and allow to grill in your oven (grill mode - on upper shelf) for about 30 minutes at 200 degrees Celsius.

Step 5: Once your potato wedges are fully grilled (soft inside, crunchy outside ), place them on a serving dish.

Step 6: Time to prepare your cheese sauce ! In your pan add your milk together with your 'Vache qui rit' triangles and favourite cheese and allow to cook on a low-medium heat while stirring continuously until all the cheese has melted.

Step 7: Once all the cheese has fully melted, add 2-3 drops of orange food colouring (totally optional ) as well as salt and pepper to taste.

Step 8: Then as your mixture has started to boil, add your corn flour dissolved in a small amount of water and stir continuously. Your cheese sauce will start to thicken. If a trace is left when you pass your spatula in the sauce as indicated below, your cheese sauce is ready !

Step 9: Spread your cheese sauce evenly on your grilled potato wedges !

Step 10: Sprinkle your red pepper, yellow pepper, onion and spring onions as shown below for that yummy look !

Step 11: Voila ! Your 'cheesy potatoes' dish is ready !
