Cat`s version Enchiladas

Cat`s version Enchiladas (For 2-3 persons)


1 sachet of Tortilla (Rs60 at Intermart - refer photo step 7)

200g tomato paste (refer photo step 1)

2 large fresh tomatoes

Salt and pepper to season

2 tablespoons of sugar

2 tablespoons of olive oil

3 cloves of garlic (grated)

1 can of young baby corn

3 medium size onions

250g of chicken breast

5 branches of thyme

50g of grated cheese

One small lettuce

10-12 black olives


Procedure

Step 1 : In your pan add your fresh tomatoes (chopped), your tomato paste, 1 tablespoon of sugar, 1 tablespoon of olive oil, 2 pinches of salt and pepper and allow to cook on a low-medium heat while stirring from time to time.

Step 2: While your tomatoes are cooking, cut your baby corn, your onions as well as your chicken breast into thin slices.

Step 3 : When your tomato mixture has become very soft, add in your grated garlic and mix uniformly.

Step 4: Separate your tomato mixture in 2 portions. The first portion (most liquid form) should be transfered to separate bowl and put aside and the second portion should be left in the pan to which you will add your cut baby corn, onions, chicken breast, 1 tablespoon of sugar, 1 tablespoon of olive oil, 3 pinches of salt and pepper.

Step 5: Allow to cook on medium-high heat for 5-6 minutes while stirring continuously until your chicken has cooked (off white color) and the tomato mixture has well penetrated the different ingredients (reddish tone).

Step 6: Top up with some fresh thyme and some more pepper !

Step 7: Take one Tortilla sheet and fill it with your mixture from previous step as below !

Step 8 : Roll the filled Tortilla and place it in a baking pan.

Step 9: Repeat step 7-8 with the remaining Tortillas. Then take your remaining portion of tomato mixture left aside in step 4 and spread it uniformly over your filled Tortillas in your baking pan !

Step 10: Once all your Tortillas are covered with your tomato mixture, top up with your grated cheese and some more fresh thyme !

Step 11: Bake in a pre-heated oven for 25 minutes at 175 degrees Celcius. While your Enchiladas are in the oven, wash and place your lettuce and dark olives on your plates as per your preference. Do not forget to season with a pinch of salt and pepper ..

Step 12: Out of the oven ! Hot hot hot !

Step 13: Wait for your Enchiladas to cool down a bit then serve accordingly !
