Light Tiramisu (For 8 servings )
Ingredients
250g of Panetone for base layer (or replace by 200g of Ladyfingers) - Refer photo step 4
200g of Ladyfingers for top layer (or replace by 250g of Panetone) - Refer photo step 7
About 400ml of your favourite dark coffee
400g of Philadelphia cheese (light version)
80ml of semi-skimmed milk
180g of white sugar
10ml of Vanilla essence
250g of unsweetened Greek yogurt (2 small cups)
20g of cocoa powder
For decoration (optional)
8 wafer rolls (Refer photo step 12)
8 Ferrero Rochers (Refer photo step 12)
Procedure
Step 1 : Prepare your favourite dark coffee ...
Step 2: In a mixing bowl add your sugar, Philadelphia cheese and Greek yogurt and mix all together using your hand whisk.
Step 3: Then add in your milk and vanilla essence and mix until combined. Your light Tiramisu cream is ready !
Step 4: Cut slices (~1cm thickness) of your Panetone and position them in a pan (~20cm(W) x ~30cm(L)) to create the base layer as shown below (right).
Note: I lined my pan with parchment paper but I eventually remarked that this is not necessary when doing the Tiramisu...
Step 5: Sprinkle your Panetone slices with your dark coffee until they appear sufficiently soaked (become dark-brown color ).
Step 6: Spread half of your Tiramisu cream (from step 3) on the wet Panetone slices .
Step 7 : Now soak (few seconds on both sides) one Ladyfinger until it changes color (dark-brown color).
Step 8: Place your soaked ladyfinger on the first layer of Tiramisu cream as shown below . Repeat with the other Ladyfingers .
Step 9: Spread the other half of your Tiramisu cream on top of your soaked Ladyfingers !
Step 10: Sprinkle cocoa powder on top of your Tiramisu until fully covered !
Step 11: Cover with cling film or aluminium foil and place in the refrigerator for at least 4 hours.
Step 12: Serving time ! Decorate with wafer rolls and Ferrero Rochers ...
