Cat`s Cari poulet recipe


6 chicken legs

4 medium size onions

4 cloves of garlic

6 full spoons of grilled Massala (with or without chilli as per your preference)

4 teaspoons of sugar

600g of tomato or pomme d`amour (I use the latter)

200ml (1 box) of cooking cream (12% Fat)

4 full spoons of Olive oil

1 teaspoon of Cayenne Pepper (optional)

10-12 cari poulet leaves

1 bouquet of coriander (cotomili)

2 medium size potato

200g of green peas

6 medium size 'piment cari'

Salt and pepper to season


Step 1: In your frying pan, add your chopped onions, garlic, sugar, a pinch of salt + grounded pepper and an equivalent of 3 full spoons of olive oil

Step 2: While ingredients from step 1 are cooking, prepare your tomatoes or pomme d`amour by washing and cutting them into small slices

Step 3: Then add your sliced tomatoes or pomme d`amour to your onion mixture (from step 1). Allow to soften on low-medium heat.

Step 4: When your tomato or pomme d`amour has become a soft paste together with your onions, get your coriander, cari poulet leaves and cooking cream and add them to the mixture. YES, add them all to the mixture as is, no chopping or whatsoever... You will see why below ...

Step 5 : Also add your grilled Massala. You may add one with or without chilli or both, that is 3 full spoons grilled Massala grilled Massalawith chilli and the remaining 3 without chilli !

Step 6 : Take your hand mixture and mix mix mix !...

Step 7: You may add some Cayenne Pepper if you like it hot (or if you did not have Grilled Massala with chilli ...)

Step 8: Individually season your chicken legs` pieces with salt and grounded pepper and place in a baking pan

Step 9 : Add your Massala mixture to your chicken pieces

Step 10: Ready for oven !

Step 11: Cover well your baking pan with Aluminum foil paper and bake covered in a preheated oven for 45 minutes at 200 degrees Celsius

Step 12: While your chicken is in the oven, wash and cut your potatoes into small cubes !

Step 13: Allow them to cook in slightly salted water until they become soft enough so that a brochette pick penetrates easily inside.

Step 14: Take your green peas and piments cari (cut in halves, seeds removed and washed) and stir fry them with a pinch of salt, grounded pepper and a full spoon of olive oil on a medium-high heat for about 3 minutes or until slightly softened

Step 15: Reserve your potatoes, green peas and piment cari until chicken is done in the oven

Step 16: After 45 minutes in the oven at 200 degrees Celsius ! Hot hot hot...

Step 17: Add your potatoes, green peas and piment cari to the hot chicken preparation !

Step 18: Cover your baking dish again and leave in the oven this time at 175 degrees Celsius for 10 more minutes, the time for all flavors to 'marry and be happy' !... After that 10 minutes, your Cat`s special chicken curry is done !... Voila !

Step 19: You may wish to serve with a carrot salad salad and tomato/pomme d`amour chatini
