Belgian Waffles (For 10 - 12 servings)
Ingredients
600g flour
8g instant yeast (Refer to photo: Step 2)
8g salt
120g castor sugar
3 small eggs
250g unsalted butter (room temperature)
160ml full cream milk (room temperature)
20ml vanilla essence
Procedure
Step 1 : Use the dough hook attachment of your stand mixer for this recipe ...
Step 2: In your mixing bowl, add your flour, sugar, salt and instant yeast.
Step 3: Mix together your milk, vanilla essence and eggs.
Step 4: Start your mixer on low speed while adding your previous mixture (milk/ eggs/vanilla ) followed by butter. Allow to mix for 1 minute.
Step 5: Increase your mixer speed to medium speed and allow to mix for 4 minutes .
Step 6: After 4 minutes, transfer your dough (sticky dough ) to a bowl, cover with a clean kitchen towel and allow to rise for at least 2 hours !
Step 7: After 2 hours your dough must have risen and become sort of a dense foam
Step 8: Press on your dough to slightly deflate it and weight small portions of about 60g each.
Step 9: Cook your waffles until they are golden brown in color. I use a stovetop waffle maker but you can certainly use your electric waffle maker ...
Step 10: First batch done !
Step 11: Repeat step 9 with the remaining dough !
Step 12: Your waffles are done ! WooHoo !
Step 13: Enjoy with your favourite topping/s !
