Cakes By Catriona Butternut Gratin !

Butternut Gratin !
(Yummy, healthy and super easy !)

 


Butternut Gratin (For 4 persons - Vegetarian recipe)

Main ingredients
About 700g of butternut
Salt and pepper to season
5g of ginger (finely chopped)
7g of garlic (about 3-4 medium size cloves)
4 triangles of 'Vache qui rit' cheese in 'Light' version (Refer photo step 5)
20g of your favourite cheese (I am using a flavoured 'Bega' cheese, refer photo step 5)
2 tablespoons of olive oil
1 tablespoon of sugar
Tons of Love
Ingredients for final topping
30g of breadcrumbs (I used 'crushed' biscuits as alternative )
30g of grated cheddar or parmesan cheese

Procedure

Step 1 : Wash your butternut and remove all its seeds .



Step 2
: Cut your butternut into thin slices as shown below.



Step 3 : In your pan, add your butternut slices, 2 pinches of salt, 1 pinch of pepper, 2 tablespoons of olive oil, 1 tablespoon of sugar together with your finely chopped garlic and ginger . Allow to cook on a medium-high heat.



Step 4: Your butternut will start to soften until it becomes a beautiful paste as shown below (right).

Note: Add some water every time you see your butternut starting to stick to your pan or thicken too much. Do not forget also to use your spoon or spatula (silicon if you are using a non-stick pan ) to 'crush' your butternut slices as they cook !



Step 5: Once you obtain your beautiful butternut paste, add in your 'Vache qui rit' triangles as well as your other favourite cheese .



Step 6: Mix mix mix until all the cheese slices and triangles have fully melted !



Step 7: Transfer your butternut paste to an oven/ microwave proof bowl and get your breadcrumbs. Because I did not have breadcrumbs, I used some crushed cream crackers biscuits instead !



Step 8: Sprinkle your breadcrumbs (or crushed biscuits ) followed by your grated cheddar or parmesan cheese over your butternut paste as shown below .



Step 9: At this stage you may either grill your gratin in the oven (on 'Grill' mode) at 180 degrees Celsius for about 8-10 minutes or, like I did, in the microwave (still on 'Grill' mode) for about 6 minutes !



Step 10: Voila ! Your gratin is ready to be served with love !



Step 11: Serve with your favourite fish dish (here 'Vindaye' poisson) and salad (here roquette, avocado and tomato salad) ...
